The Resort at Red Hawk and Executive Chef B.J. Mueller will offer a series of cooking courses teaching students to bring his flair and talent into their own kitchens. The 2008 Cooking Series at the Resort at Redhawk is composed of four different courses.

First course
The first course, on Feb. 26 from 5 -7 p.m. is devoted to soups. Chef Mueller will lead the participants through the building foundations for great soup, from hearty chowders to soothing broths. This course is $70 and the accompanying cookbook,The Big Book of Soups and Stews is available for $14.

Second course
Join Chef Mueller on March 25 from 5-7 p.m. for the second course, dedicated to pasta. Mueller will edify the fine art of homemade pasta, everything from fettuccine to gnocchi. Participants should expect to be elbow deep in flour as they learn how to make pasta from scratch. This course is also $70 and the accompanying cookbook, The Pasta Bible is available for $13.

Third course
The third course travels from the Mediterranean to the Far East, on April 22 from 5-7 p.m., as Chef Mueller explores the fine art of Sushi. He will help students master this delicate cuisine and turn their homes into their very own all-you-can-eat sushi bars. This course is $80 and the accompanying cookbook, The Complete Book of Sushi is available for an additional $20.

Fourth course
Chef Mueller will fire up the barbecue on May 20 from 5-7 p.m. for the fourth course, grilling. Chef Mueller will expand the barbecue’s repertoire beyond steaks and chicken just in time for Memorial Day and the grilling season. This course is also $80 each and the accompanying cookbook, The Williams-Sonoma Collection Grilling is available for $11. Along with the cookbooks, an eight-inch Forschner knife is available for $26 and an embroidered chef jacket is available for $40.

Prix fixe
The prix fixe includes all four courses and the accompaniments including cookbooks, the chef’s knife and the embroidered chef jacket for only $395, a savings of $30.
